Are you ready to discover a typical recipe of our Montefalco?
Today we have chosen to offer you a first course of potato gnocchi for a lunch that will surprise all your friends and your family!
What is it? Our gnocchi with Montioni Sagrantino DOCG, in the Montioni version!
Ingredients for 4 servings:
– 1 kg potato gnocchi
– ½ onion
– 150 g guanciale (cheek lard)
– ½ glass Montioni Montefalco Sagrantino
– ½ glass Montioni Sagrantino Passito
– 200 ml cooking cream
– Montioni Extra Virgin Olive Oil
– Grated Parmesan cheese as desired

Method:
1. Sauté the chopped onion in a pan together with the sliced guanciale with a drizzle of Montioni Extra Virgin Olive Oil.

Tip: Leave a few slices of jowl bacon aside and then make them crispy in a pan and add them on top of the gnocchi portions before serving to make them even tastier!
2. Add the Montioni Sagrantino wines and let they thicken for about 5 minutes.

3. Pour the mixture into the blender, mix all and put the cream back into the pan.

4. Add the cooking cream to the sauce and mix over low heat.


5. Meanwhile, cook the gnocchi in another pot.
6. Drain the gnocchi as soon as they rise to the water surface and immediately add them to the sauce.

7. Add a sprinkle of grated Parmesan cheese to taste, the slices of crispy bacon left aside and serve the Gnocchi with Montioni Sagrantino- one of the best first courses of Umbria!
