Mulled wine cake with Montioni Montefalco Rosso DOC

We welcome the new year with a particular mulled wine cake made by Ma cos’hai messo nei sufflè?!… To pamper yourself on cold winter afternoons … With that scent of spices and a touch of unexpected taste: Montioni Montefalco Rosso D.O.C., made from 65% Sangiovese, 20% Merlot and 15% Sagrantino grapes.
Try it with a glass of Montioni Sagrantino Passito… ça va sans dire…

Ingredients
250 g flour 00
25 g unsweetened cocoa powder
a glass of Montioni Montefalco Rosso D.O.C.
150 g dark chocolate
4 eggs
250 g butter
200 g brown sugar
50 g honey
2 teaspoons of mixed spices for mulled wine
a sachet of baking powder for cakes
1 pinch of salt

Preparation
Chop the dark chocolate and melt over low heat in a saucepan. Keep warm stirring occasionally.

Beat the soft butter with the sugar until foamy. Combine the honey and eggs one at a time. Beat everything and then add the red wine and salt. Add the melted chocolate.

Sift the flour with baking powder, cocoa powder and spices and add to the mixture while stirring constantly.

Butter and flour an opening mould 24 cm in diameter and pour the mixture (which will be like a mousse very fluffy); level it and bake in a static oven preheated to 150 degrees for about 90 minutes.

Allow the cake to cool completely and then decorate as desired.
